Crock Pot Creamy Lemon Chicken with Capers

My crock pot doesn’t get much action in the spring and summer but becomes one of my favorite kitchen tools in the fall and winter.  So with the cool weather that rolled in this weekend, I dusted off the crock pot and made a Creamy Lemon Chicken with Capers.  I was inspired by a recipe I read on Pinterest and our family’s favorite chicken dish, Chicken Scaloppine.
  • 1 lb. of Chicken Breasts
  • 4 cloves of garlic ,minced
  • 1 small package of Baby Bella mushroom, chopped coarsly
  • 1 lemon, zested
  • 1 lemon, juiced
  • 1 T olive oil
  • 2 T butter
  • 1/2 c white wine
  • 1 c chicken broth
  • 3 oz 1/3 less fat cream cheese
  • 1 t oregano
  • 1 t onion powder
  • 1/2 t celery seed
  • 1 T parsley
  • 1/2 t thyme
  • 1/2 t basil
  • salt and pepper to taste
  • 1 T cornstarch
  • 3 T capers

**Or you could substitute all the herbs for 1/2 package of italian dressing seasoning packet.

Add everything to the crock pot through the salt and pepper.  Cook on high for 4-6 hours. Remove chicken. Dissolve cornstarch in 2 T cold water.  Turn crock pot up to high and cook till sauce is thick.  Add 3 T of capers.  Pour sauce over chicken and serve!!

We like lots of sauce in the house for gravy to top our whole wheat pasta, mashed potatoes, or bread so the recipes reflects that.  Adjust it according to your taste.
